Cheeseburger Pie

All I can say after stumbling on this one is...............WOW!!!   It was easy, delicious, and melt in your mouth good.  If you have children who love their burgers, but you are tired of hitting the drive thru...try this one!  If you are like me, and want to make it healthy...try substituting reduced fat items.  I used the reduced fat crescent rolls, and a leaner ground beef and it did not take away from the taste.

    1 can crescent rolls 1 pound ground beef 1/4 cup finely chopped onion 1/3 cup chopped dill pickle slices 2 Tablespoons ketchup 1 teaspoon prepared mustard 2 Tablespoons flour 2 Tablespoons dill pickle juice 2 Tablespoons milk 2 cups shredded American cheese, divided
  1. Preheat oven to 375°.
  2. Unroll crescent rolls and press into the bottom and up the sides of an 8 inch pie pan.
  3. Cook ground beef in a skillet until browned. Drain well.
  4. Stir in onion, chopped pickle, ketchup and mustard.
  5. Sprinkle with flour and add pickle juice and milk. Cook and stir until thickened and bubbly.
  6. Remove from heat and add 1 cup of shredded cheese.
  7. Pour into the prepared crust and bake for 15 minutes, or until edges of crust are golden brown.
  8. Remove from oven and top with remaining cup of cheese. Let stand until cheese melts.
  9. Garnish with extra ketchup, mustard and pickle slices.

Broccoli Side Dish

I don't know about you, but I can't stand soggy, bland vegetables for my side dish. YUCK!  I love crunch, color, and taste!   Try this one if you are looking for a quick, easy side that packs a punch in flavor.

Preheat your oven to 425 degrees.  Wash and cut your broccoli while it is heating up.  Toss your broccoli in olive oil (choose your poison...I always use extra virgin olive oil). Place in a baking dish.  Sprinkle the broccoli with some kosher or sea salt, toss.  Place in the oven for about 10 minutes.  I usually take mine out when I hear a nice sizzle.  This side is great for a quick dish, and you can improvise.  Like a little cheese with the broccoli?  Add some parmesean cheese.  Like a little kick?  Thrown in a bit of minced garlic.   The possibilities are endless!!   :)

Poppy Seed Chicken

This is a sure win for your family, friends, or a covered dish at Church!  It was passed on to me by my Mom and it is a hit everytime I make it.  It tastes great...reheats wonderfully...and when cooked in a 9x13 Pyrex dish can be a meal that can be eaten at several sittings (money saver!).  I will even prep everything the day before (minus the cracker/margerine/poppy seed mixture) as a time saver.

4-cooked, chopped or shredded chicken breasts
2-cans cream of chicken soup
1/2 pint of sour cream
1 1/2 sticks margerine (melted)
1 1/2 rolls of Ritz Crackers
3 tsp of Poppy Seeds

You will place your chopped/shredded chicken in a 9x13 baking dish.  Combine the cream of chicken soup and sour cream.  Pour this over the chicken.  Crush your crackers in another bowl, stirring in the melted margerine.  Add your poppy seeds to the cracker-margerine mixture.  Pour this on top of the dish.  Bake at 350 degrees for about 25-30 minutes or until the dish is bubbly.

So...here I sit at my kitchen table, blogging to you all.  I have never been a blogger, but I figured I would give it a try and blog about something that I enjoy doing--cooking!  10 months ago I became a Mom for the first time.  It has been the most tiresome, wonderful time of my life!  I throroughly enjoyed staying home with my son.  It was nice to have all day to do anything and everything I needed to get done, and as a new Mom--man what a list that is, day in and day out!  Meals were so easy since I was home all day, but when I started back to work I had to cook smarter and faster.  I wanted to make sure I could still prepare good meals, and not spend all my after 5pm time doing so.  I hope that you will try some of the recipes I blog to you. Some have been passed down through my family for years while others are some of my unique creations!  Enjoy!
